Chicken with Creamy Bacon Sauce

Recipe Ingredients

1 x tbsp Coconut Oil
6 x thighs Chicken Thighs
1 x tsp Salt
1 x tsp Pepper
3 x cloves Garlic (minced)
1.5 x cups Chicken Stock
8 x strips Bacon (cooked and diced)
5 x slices Lemon (thin slices)
2/3 x cup Heavy Cream
2 x medium Green Onions (chopped)

Recipe Instructions

Heat olive oil in a large skillet on medium-high heat.
Generously season chicken thighs with salt and pepper.
When the skillet is hot, add chicken thighs skin side down to the hot skillet.
Cook for about 10 minutes on high-medium heat, until the skin side is very well browned.
Then flip the chicken and cook another 3 minutes.
Remove chicken from the skillet and set aside. ( chicken is not fully cooked)
Add minced garlic and a small amount of chicken stock to deglaze the pan and cook the garlic for about a minute.
Add the remaining chicken stock.
Add half the bacon.
Add chicken back to the pan, on top of bacon and in the chicken broth, skin side up.
Arrange 5 thin lemon slices around chicken thighs.
Simmer covered for 20 min.
Remove cover and continue to simmer for another for about 20 minutes, until chicken is done and is no longer pink in the center.
After chicken is cooked, remove the chicken and lemon slices from the skillet and set aside.
Add heavy cream to the skillet.
Bring to boil and mix everything well, scraping from the bottom.
Immediately reduce to simmer, add chicken thighs back to the skillet and reheat.
To serve, spoon some of the sauce over the chicken thighs, and sprinkle with remaining chopped bacon and chopped green onions.

6 x medium Frozen Chicken Breasts
6 x oz Jarred Pesto
1.1 x oz packet Dry Ranch Seasoning
7 x tbsp Butter
3 x cloves Garlic (mashed)

Recipe Instructions

Evenly place frozen chicken in your crockpot.
In a bowl, combine pesto and dry ranch.
Pour pesto mixture over chicken.
Add butter and garlic cloves to the crockpot.
Cover and cook on high for 3 hours.
After 3 hours, turn crockpot down to low and continue to cook for an additional 3 hours.

Recipe Instructions

Preheat oven to 350 degrees.
Spray a baking pan with nonstick spray.
Heat a skillet to medium-high heat with coconut oil.
Add onion, garlic, and bell peppers.
Cook and stir until softened, about 6 minutes.
Transfer cooked veggies to a bowl with the cream cheese and sprinkle with 1 tsp. fajita seasoning and stir well.
Slice a pocket in to the chicken breasts so that you can stuff them. Make sure it is not too deep where everything will fall out.

Recipe Instructions

Heat a skillet to medium high heat and add olive oil.
In a shallow bowl combine chili powder, cumin, paprika, salt, garlic powder, onion powder, and pepper.
Rub the seasoning into the chicken on each side.
Pan sear in the hot oil until each side is brown.
Transfer chicken to slow cooker.
Add the chicken broth and lime juice and cook on low for 5-6 hours or high 3-4 hours.
Carefully remove the chicken and add heavy cream, cilantro, and cornstarch and water and mix well.
