Macronutrients:

Ingredients:

For Crust:

  • 1 lb. ground breakfast sausage
  • 1 egg
  • 2 oz. grated parmesan cheese
  • 1 tsp. onion powder
  • 1 tsp. salt
  • ½ tsp. pepper

For Sauce:

  • 3 oz. shredded cheddar cheese
  • 2 oz. heavy cream

Toppings:

  • 2 oz. shredded cheddar cheese
  • 5 eggs, scrambled
  • 6 strips of bacon, cooked and crumbled
  • 2 oz. diced ham

Instructions:

  1. Preheat oven to 350ºF.
  2. In a bowl, mix the ground sausage, egg, parmesan, and seasonings until combined.
  3. Form into a ½ circle on a foil lined pan.
  4. Bake until cooked through, about 18 minutes.
  5. While crust is cooking, heat heavy cream, almost bringing it to a simmer.
  6. Add cheese and stir until completely melted into a sauce.
  7. Remove Crust from oven when cooked through. Drain any excess grease.
  8. Spoon on the cheese sauce, top with scrambled eggs, cheddar cheese, ham, and crumbled bacon.
  9. Cook until cheese is melted, about 7 minutes.
  10. Remove from oven and cut into triangles.
Cauliflower Crust Pizza

Ingredients:

For Crust:

  • 1 small or medium head of cauliflower
  • 1/4 tsp. salt
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried oregano
  • 1/2 tsp. garlic powder
  • Dash of crushed red pepper
  • 1/4 cup shredded parmesan cheese
  • 1/4 cup mozzarella cheese
  • 1 egg

Toppings:

  • ½ cup pizza sauce
  • 1 cup shredded mozzarella
  • 1 yellow pepper, diced
  • ¼ small onion, diced
  • 30 pepperonis

Instructions:

  1. Preheat oven to 450ºF.
  2. On a pizza pan or sheet pan, place a large piece of parchment paper and spray it with non-stick cooking oil.
  3. Wash and thoroughly dry a small head of cauliflower.
  4. Cut off the florets and pulse in food processor for about 30 seconds, until you get powdery, snow-like cauliflower. This should yield 2 to 3 cups of cauliflower.
  5. Place the cauliflower in a microwave safe bowl and cover.
  6. Microwave for 4 minutes.
  7. Dump cooked cauliflower onto a clean towel and allow to cool for a bit.
  8. Once cauliflower is cool enough to handle, wrap it up in the dish towel and squeeze the excess water out, getting out as much water as possible. This will ensure you get a chewy crust.
  9. Dump cauliflower into a bowl and add egg, parmesan, mozzarella, salt, basil, oregano, garlic powder, and red pepper, and mix well.
  10. Once mixed, use your hands to form the dough into a ½ disk on the oiled parchment paper. Pat it down thoroughly so it’s tightly formed.
  11. Place in oven and bake for 15 minutes, until it starts to turn golden brown.
  12. Remove from oven.
  13. Add sauce, cheese, and toppings.
  14. Place back in oven and cook for an additional 10 minutes, until the cheese is melted, bubbly, and slightly golden.

  • 1 cup shredded mozzarella cheese (or a pizza cheese blend)
  • 12 pepperonis
  • Salt and pepper, to taste

Instructions:

  1. Preheat oven to broil and arrange oven shelf to the middle of your oven.
  2. Combine the oil, garlic and half of the Italian seasoning together in a small bowl.
  3. Brush the bottom of each mushroom with the garlic oil mixture and place each mushroom oil side down.
  4. Fill each cap with a third of the pizza sauce, 1/3 cup of mozzarella cheese, and four pepperonis.
  5. Broil until cheese has melted and is golden in color, about 8 minutes.
  6. Sprinkle with the remaining Italian seasoning and add salt and pepper.
