Pumpkin Butter

Yields: 5 ½ cups

1 can of 100% pumpkin purée (1.75 cups)
⅓ cup browned butter
⅓ cup sugar-free syrup
3 tablespoons melted coconut oil
2 tablespoons stevia blend
1 ½ teaspoon pumpkin pie spice
¼ teaspoon ground ginger
1/2 teaspoon nutmeg
2 teaspoon cinnamon
1 teaspoon apple cider vinegar


  • Start by heating the butter in a pan on very low heat until it turns brown (about 8- 10 minutes). Once ready, leave aside and let cool.
  • In a separate pan, add the pumpkin purée, butter, and coconut oil. Mix slowly with a wooden spoon until homogeneous, while cooking on low heat.
  • Add the spice and continue mixing. Let it cook for at least 10 min. on low heat while you stir with the wooden spoon approximately every 4 minutes.
  • Once ready, remove from heat and let cool. Serve as desired.
