Ground beef gets an extra zing in this recipe, which adds chives, blue cheese, mustard, and egg to create tasty little patties that make the perfect accompaniment to a simple cauliflower mash.

Place the cauliflower in a steamer basket over boiling water and cover. Steam for 10 to 15 minutes. Transfer the steamed cauliflower to a food processor or blender. Add 2/3 of the water and blend until desired texture. Set aside and keep warm.
While the cauliflower cooks, mix the ground beef, mustard, chives, blue cheese, egg, and remaining water in a large bowl. Form the meat into equal patties, approximately four inches in diameter.
Heat the oil in a large pan over medium-high heat. Cook the patties for two to three minutes per side, or until cooked through. Set aside and keep warm.
