Salmon salad lettuce wraps are perfect for those warm summer days when you don't feel like turning on the oven--or the stove. They're also easy to throw together with just a few ingredients that you probably already have in your pantry. If you like, substitute canned tuna or mackerel for the salmon, and add any herbs and spices that suit your fancy.

Ingredients

 15 oz canned wild salmon(drained)
 1 cup unsweetened coconut yogurt
 ¼ cup fresh dill(minced)
 1 tbsp lemon juice
 ½ tsp salt
 ½ head of lettuce(separated into leaves and washed)

In a bowl, combine the salmon, coconut yogurt, dill, lemon juice and salt. Adjust flavors and seasoning as desired.

Scoop the mixture onto the lettuce leaves and enjoy!
