 1 pinch parsley

Portion the feta into twelve 1-ounce balls.

Lay a slice of bacon on a flat surface with a short end facing you. Place a feta ball on the bacon slice, at the short end nearest you. Begin to roll the bacon over the feta and keep rolling until you get to the middle of the strip. Once at the midway point, gently turn the feta ball 90 degrees, until the exposed side is facing the remaining portion of the bacon strip, and continue to roll until the feta is completely wrapped on all sides. Spear with a toothpick to hold the bacon in place. Repeat with the remaining slices of bacon and feta.

In a large sauté pan over medium heat, sear the bacon-wrapped cheese balls for 2 to 3 minutes on each side, until the bacon is crisp.

Remove the bacon-wrapped cheese bites from the pan, top with parsley, and serve with cherry tomatoes.

Store in an airtight container in the refrigerator for up to 1 week.
