Brussels sprouts are a great side dish to your favorite keto meal because they are packed full of micronutrients and fiber. Brussels sprouts are relatively low in carbohydrates (as compared to some other vegetables) and can be made more keto-friendly by adding in healthy fats. This Brussels sprouts recipe combines the flavors of Brussels with bacon and onion for the perfect tasty side dish!
In a large sauté pan, cook the bacon over medium-low heat for 5 to 6 minutes to render the fat.
Increase the heat to medium and add the butter to the pan. Allow to come up to temperature for 1 to 2 minutes before adding the Brussels sprouts. Sauté for 3 to 4 minutes, stirring frequently, until the outsides begin to crisp. Add the stock and simmer over low heat for 4 to 5 minutes, until the Brussels are tender, then season to taste with salt and pepper.
Serve the Brussels sprouts hot with the pearl onions sprinkled around them. Store in an airtight container in the refrigerator for up to 4 days.
