Roasted and covered in keto dipping sauce, this roasted whole cauliflower is a fun side dish for your Halloween party but makes a tasty addition to any meal.
Preheat the oven at 400°F.
Wash the head of cauliflower and pat it dry. Place on an ungreased baking sheet and set aside.
In a small bowl, combine the avocado oil, Thai red curry paste, and chili powder.
Evenly coat the cauliflower head with the mixture, and place in the oven for 25 minutes.
In a medium bowl combine 4 tablespoons of the mayonnaise, Swerve confectioners sweetener, Thai chili garlic sauce, garlic powder, and yogurt.
Remove the cauliflower from the oven and pour the sauce over the cauliflower. Continue to cook for an additional 15 minutes.
In a new bowl, mix the rest of the mayonnaise and half of the Sriracha sauce.
Fill a pastry piping bag with the mixture. If you don’t have piping bag, place in a plastic sandwich bag and cut the corner. Remove the cauliflower from the oven and pipe the sauce over the cauliflower.
Drizzle the rest of the sriracha sauce over the cauliflower and garnish with cilantro.
