Recipe Instructions

Steam cauliflower in heavily salted water in a large stockpot until tender, about 6 minutes.

Remove cauliflower from water, strain, then mash in a large bowl with a potato masher until a dough has formed.

Place cauliflower dough in a mesh strainer lined with cheese cloth over large bowl; put in the refrigerator for 24 hours to drain.

The following day preheat the oven to 400ºF.

Allow cream cheese to soften at room temperature.

Remove strained cauliflower from the mesh strainer and place in a large bowl with the remaining pizza crust ingredients; blend until smooth and incorporated.

Place a sheet of parchment paper in a flat surface and roll out dough with a rolling pin until ~1/4” thick; pick up parchment paper and place on a pizza pan or sheet pan.

Par bake the crust for ~20 minutes until lightly browned.

Remove from oven, top with remaining toppings, then place back in the oven for ~3-5 minutes until cheese is melted.

Remove from oven, allow to rest for 3 minutes, then cut into 4 slices and serve hot.
