You don't have to give up pizza on a keto diet. This cauliflower pizza crust incorporates egg and cheese to help hold everything together, and it makes a tasty base for any type of pizza you can dream up: we like to pile on the cheese, pepperoni, olives, peppers, and mushrooms.
Pulse the cauliflower in a food processor until it resembles rice. Do this in batches if needed.
Microwave the riced cauliflower in a bowl on high for five minutes. In the meantime, preheat the oven to 425ºF (220ºC) and line a large cast-iron skillet with parchment paper.
Let the cauliflower cool for 15 minutes. Transfer the cauliflower to a clean dish towel or cheesecloth and squeeze off excess moisture. You want to remove as much moisture as physically possible for a crisp crust. Transfer it to a large bowl and add the rest of the ingredients. Stir to combine and form a soft dough.
Place the dough in the middle of the prepared skillet and push out with your hands to reach 1/4-inch thickness.
Bake for 20 minutes or until the crust is firm and slightly golden brown. Top with your favorite pizza sauce and toppings. Enjoy!
