Recipe Instructions

Preheat your oven to 350°F.

Coat a muffin pan with nonstick cooking spray.

Divide the peppers, onion, and ham between the cups in the muffin pan.

Top each with a heaping tablespoon of cheddar cheese.

Crack the eggs into a large bowl.

Add the salt and pepper, and lightly beat.

Divide the egg mixture evenly between the muffin cups letting the egg soak down into the cups.

Bake for 25-30 minutes, or until eggs are set and top is lightly golden brown.

Let cool about 5 minutes and then gently remove each egg cup from the pan and serve.
