In a microwavable safe bowl, add 1 tsp of coconut oil to the white chocolate chips.
Melt in the microwave for 30 seconds. Take out, stir, and microwave in 10 second intervals until fully melted.
Repeat this step with the dark chocolate chips in a separate bowl.
Separate the white chocolate chips into separate bowls and add a few coloring drops until the color you'd like is achieved.
Dip one strawberry at a time into the melted chocolate, spooning additional chocolate over to cover all sides.
Place on a sheet of parchment paper and repeat with the remaining strawberries.
Once the base layer color is on the strawberries, place in the fridge and allow to harden (around 10-15 minutes).
Remove from the fridge, add colored chocolate of choice to a piping bag, and decorate as desired.
Place back in the fridge for an additional 10-15 minutes to allow the chocolate to harden.
