Chopped Tahini Salad

Don't let salads be forgotten on your keto diet--they are a wonderful way to incorporate nutrient-dense vegetables while still being low-carb. If you're not familiar with Tahini, it can be used for salad dressing or dipping sauce. Made from sesame seeds, the higher-fat dressing is not only delicious but also perfect for your keto macros.

Ingredients
 2 tbsp Tahini
 3 tbsp water
 2 tbsp chives
 salt and pepper, to taste
 1 head Romaine hearts, chopped
 ½ medium cucumber, chopped
 1 medium carrot, peeled and chopped
 1 medium red bell pepper, chopped
 1 cup broccoli, chopped
 8 oz chicken breast, cooked and chopped

Add the tahini to a small bowl and stir in the water. Add the chives and season with salt and pepper, to taste.

Divide the lettuce between bowls and top with cucumber, carrot, red pepper, broccoli, and chicken. Pour the dressing over top and enjoy!
