Recipe Instructions

Preheat oven to 350 degrees.

Cream together with a mixer the butter and cream cheese until it is well blended.

Add the almond extract and truvia and mix until combined.

In a separate bowl, mix the flours, salt, and baking powder.

Add the dry ingredients to the butter and cream cheese mixture and mix until everything is blended together.

Wrap the dough in plastic wrap and chill for 40 minutes.

While the dough is chilling, melt the white chocolate and divide into 4 bowls.

Color each bowl with food coloring to make pink, blue, yellow, and purple.

Dip the almonds in the colored chocolate and place on parchment paper to dry.

Add the coconut and sucralose to a large ziplock bag and shake so the sucralose coats the coconut.

Add a few drops of green food coloring to make the coconut look like grass.

When the dough has finished chilling, remove from the refrigerator and roll into gumball sized balls.

Roll each ball in the green coconut and set on a sheet pan and inch apart.

Place in the oven and bake for about 10 minutes.

Quickly remove from the oven and place two chocolate covered almonds on top(slightly pressing down).

Let cool and serve.
