With just three ingredients (plus salt) you can whip up a coconut yogurt-based salad dressing that makes a rich and flavorful topping to salads. Double the batch and you can keep it in the fridge to perk up a chicken breast or fillet of salmon any time you have the need for a tangy sauce. Cilantro complements the lime juice in this recipe perfectly, but you can also customize this dressing by substituting or adding other herbs, like oregano, mint, or tarragon.

 ¾ cup unsweetened coconut yogurt
 ½ cup cilantro
 1 tsp lime juice
 ¼ tsp sea salt

Add all the ingredients into a food processor. Blend until smooth, scraping down the sides as needed.

Adjust the salt and lime juice to your preference. Add water to loosen, if desired (optional). Enjoy!
