Creamy Lemon Tilapia

Tilapia fillets are inexpensive and thin, which means they cook up quickly for a fast and convenient dinner. A simple sauce using garlic, broth, lemon juice, and Greek yogurt ensures that this fish dinner is anything but boring.

Creamy lemon tilapia in pan

 3 tbsp butter(divided)
 3 tilapia fillets
 3 garlic cloves(minced)
 ½ cup chicken broth
 2 tbsp lemon juice
 ¼ cup plain Greek yogurt
 2 tbsp parsley(chopped)
 sea salt and pepper(to taste)

Heat 1/3 of the butter in a pan on medium-high heat. Add the tilapia fillets and cook for three minutes per side. Set fillets aside.

In the same pan, melt the remaining butter and add the garlic, cooking until fragrant, about one minute.

Add the chicken broth and cook for three to five minutes until the mixture begins to reduce. Remove pan from heat.

Whisk in the lemon juice. Slowly whisk in the greek yogurt. Add the tilapia back into the pan. Season with salt, pepper, and parsley, and enjoy.
