Broccoli is delicious and nutrient-dense, but it can get boring! Who wants to eat plain vegetables on keto, when (unlike on other diets) you can top it with cheese! Enjoy this simple yet delicious easy cheesy keto Parmesan broccoli recipe all on it's own or as a side for all of your favorite keto meals!
Preheat the oven to 400 degree F and line a baking sheet with payment paper.
Wash and cut the broccoli into stalks.
Arrange the broccoli evenly on the cookie sheet so that there is no overlap (if they are too close, the veggies will steam instead of roasting!).
Lightly coat the broccoli in olive oil and any additional seasonings.
Top with half of the Parmesan cheese.
Bake the roasted keto Parmesan broccoli in the oven for 15 minutes.
Turn over the broccoli and top with the remaining Parmesan cheese.
Cook for an additional 10 minutes.
Top the broccoli with the mozzarella cheese and bake for an additional 5 minutes or until the cheese has melted.
Serve your delicious easy cheesy roasted keto Parmesan broccoli alone or as a side dish with your favorite keto meal!
