This avocado cucumber salad is great crowd-pleasing side dish that you can serve for your next dinner party, or just as a great salad to whip up for lunch anytime. Fresh avocados are tossed with cucumber, tomatoes, red onion, and cilantro and married with a spicy lemon vinaigrette. This avocado salad is a winning combo of flavors!
To start the avocado salad, chop up avocado, dice onion, slice cucumber, rough chop the cilantro.
Add all of the ingredients to a serving bowl. Combine the ingredients for the dressing (olive oil, lemon juice, garlic, red pepper flakes, oregano, and salt). Mix well.
Drizzle the dressing all over the avocado salad and mix until evenly coated. Serve immediately.
