 12 large eggs
 100 g mushrooms, diced
 1 cup mozzarella cheese, shredded
 ¼ cup bacon bits
 1 tbsp unsweetened almond milk

Preheat the oven to 375° F and grease a muffin pan.


In a medium bowl, mix the eggs, cheese, mushrooms, almond milk, salt, and pepper.


Evenly scoop batter into the muffin tins.


Bake for 10 minutes or until eggs are bouncy to the touch.
