Recipe Instructions

Preheat oven to 350F.

To make the dough, mix the mozzarella cheese and almond flour in a microwave safe bowl. Add the cream cheese. Microwave on high for 1 minute. Stir the mixture and then microwave again on high for 30 seconds. Remove and add the egg and seasonings. Mix until combined.

Place the dough ball on a sheet of parchment paper and place another sheet on top. Using a rolling pin, roll out the dough into a rectangle to about ¼ inch thickness. Remove the top piece of paper and set aside.

To make the filling, take a small microwave save bowl and melt the ghee. Add the brown sugar and cinnamon and stir until blended.

Spread the filling mixture evenly on top of the rolled out dough.

Take the longest side of the rectangle and tightly roll the dough evenly to the other long side of the rectangle, creating a log. Take a knife and cut the log into 15 even portions creating cinnamon rolls.

Place the cinnamon rolls on a parchment lined baking sheet swirl side up(make sure that the ends are sealed on the dough).

Put the baking sheet in the oven for about 12 minutes or until they begin to brown. Once they have slightly browned, remove from the oven.

While the cinnamon rolls are in the oven, mix the icing ingredients with a mixer until blended.

When the cinnamon rolls are removed from the oven, spread the icing over the rolls and serve.
