This battered and fried keto buffalo cauliflower recipe is the perfect alternative! These keto cauliflower bites are coated in buffalo sauce and fried to perfect to give them a taste and texture similar to traditional chicken wings. Try pairing them with your favorite keto-friendly dressings (like blue cheese or ranch) and celery!

In a large bowl, whisk together the buttermilk, heavy cream, ¼ cup of the Buffalo wing sauce, 2 tablespoons of the Parmesan, almond flour, vinegar, paprika, onion powder, garlic powder, cayenne pepper, and xanthan gum until fully combined. Add the cauliflower florets and toss to coat. Allow to marinate for 20 minutes.

Preheat the oven to 450°F and line a sheet pan with parchment paper.

Remove the cauliflower florets from the marinade and lay them on the lined sheet pan; reserve the marinade. Roast the cauliflower for 15 to 18 minutes, flipping it over halfway through.

While the cauliflower is roasting, transfer the marinade to a small saucepan and bring to a simmer over medium heat. Continue to simmer for 4 to 5 minutes, until reduced by one-quarter. Add the blue cheese dressing and whisk until smooth to make a dipping sauce. Hold over low heat until the cauliflower is done.

Remove the cauliflower from the oven and set the broiler to high. Toss the florets in a large bowl with the remaining ¼ cup of Buffalo wing sauce, then return them to the sheet pan and broil for 2 to 3 minutes, until the outsides begin to crisp and turn brown.

Remove the keto buffalo cauliflower bites from the oven and sprinkle with the remaining ¼ cup of Parmesan cheese. Top with chopped parsley, if desired.
