This omelet recipe incorporates three of the most popular ingredients found in Greek cuisine--Feta cheese, Kalamata olives, and fresh tomatoes. You'll enjoy healthy foods found in the Mediterranean diet, along with lots of beneficial fats to hit your keto macros!

Greek omelet

Ingredients
 2 whole eggs
 salt and pepper, to taste
 ½ tsp olive oil
 2 tbsp diced tomatoes
 1 tbsp chopped Kalamata olives
 1 tbsp crumbled Feta cheese
 1 ½ tsp fresh parsley, chopped
Directions

In a small bowl, whisk the eggs with a fork and season with salt and pepper, to taste. Set aside.

Heat a small skillet over medium heat and add the oil. Pour in the egg mixture and cook until almost set, about 4 minutes. Place the chopped tomato, olives, and feta on one half of the omelet and fold the other half over top. Remove from heat and top with parsley. Enjoy!
