Indian Chicken Kabobs

These Indian-spiced chicken skewers require a bit of thinking ahead--you'll need to marinate them for an hour in yogurt and spices before cooking them--but you won't be sorry. They're especially good made on the grill, but if you don't have one, put them under the broiler, turning at least once during cooking.

Indian chicken kabob skewers

 1 ½ lbs chicken thighs(boneless, skinless, cut into 1-inch cubes)
 1 tbsp cumin
 2 tsp paprika
 1 tsp turmeric
 1 tsp coriander
 ½ tsp cayenne pepper
 ½ cup plain whole milk yogurt
 4 cloves of garlic(minced)

Season the chicken with salt and pepper.

In a large bowl, mix the spices with the yogurt, garlic, and lemon juice. Add the chicken and cover with plastic wrap. Place in the fridge to marinate for one hour.

Thread the chicken cubes onto the skewers. Grill over medium heat for about five to seven minutes per side, or until browned and cooked through. Enjoy!
