Keto Bacon Brussels Sprout Breakfast

Ingredients for Egg Mixture
 8 large eggs, whisked
 ¼ cup heavy whipping cream
 ¼ tsp garlic powder
 ¼ tsp salt
 ¼ tsp black pepper
 1 cup shredded cheese, 1/4 cup more to finish
Ingredients for Sprouts
 16 oz fresh Brussels sprouts, stemmed and halved or quartered
 ½ cup mayonnaise
 ¼ tsp garlic powder
 ¼ tsp salt
 ¼ tsp black pepper

Preheat oven to 375ºF.

In a large mixing bowl, add all the sprouts ingredients except bacon. Toss to combine.

Air fry at 370ºF for 12 minutes, open and stir. Continue to cook at 400ºF for 10 minutes more.

*You can oven roast at 425ºF for 25–35 minutes, turning once.

In a large mixing bowl, combine all the egg mixture ingredients, whisk well.

Butter a 9x13" baking dish. Add sprouts and bacon, scattered evenly. Then, pour over egg mixture.

Bake at 375ºF for 25 minutes. At the 20-minute mark, add remaining 1/4 cup of cheese to the top.

Remove. Allow to cool 5 minutes before serving.
