Grease a waffle iron and heat on high.
In a medium bowl, beat egg whites until stiff peaks form and set aside.
In a large bowl, combine almond flour, erythritol , baking powder, and salt.
Fold in the yolks, coconut oil, almond milk, and vanilla into the egg whites.
Slowly fold in the dry ingredient bowl into the egg mixtures until well combined.
Pour half of the batter into the hot waffle iron.
Close and cook until steam stops coming out (about 5 minutes).
Remove, add remaining batter and cook for the same length of time.
