Sometimes the cooking doesn't stop after Thanksgiving dinner! These fluffy biscuits are perfect for a festive post-holiday brunch and they are made from keto-approved ingredients. Topped with gravy, this is comfort food at its finest, or simply add butter, ghee, or cream cheese with smoked salmon.
Using a fork, thoroughly combine all ingredients in a microwave-safe mug until the mixture is smooth. Using the back of a spoon, smooth out the top into an even surface.
Microwave for one minute (based on your microwave, you may have to slightly alter the time and experiment with high versus medium-high temperatures).
Using a potholder or thick cloth, remove the hot mug from the microwave. Cover with a plate and turn upside down, allowing the biscuit to slide out of the coffee cup. Slice into four even pieces and set aside.
In a small saucepan over medium heat, brown the sausage while breaking into smaller chunks with a spatula.
Add the cream cheese and combine until blended.
Add the half and half and stir until thoroughly incorporated.
Let the gravy reduce over medium heat until you have reached a desired consistency, around 3 to 5 minutes. Remove from the heat and season with salt and pepper, to taste.
Pour the gravy over the biscuits and serve warm. Garnish with parsley, if desired.
