Heat oil over a large griddle or skillet.
Blend all pancake ingredients but blueberries until batter is well combined,
Gently fold blueberries into the batter.
Pour ¼ cup batter onto skillet/griddle and cook pancakes for 1-2 minutes on each side.
Flip and repeat for 30 seconds -1 minute
In a different bowl, mix all of the frosting ingredients.
Drizzle frosting on top of the pancakes.
