In a small bowl, combine mayonnaise, vinegar, salt and pepper, and set aside.
Prepare the first four ingredients and combine in a large mixing bowl.
Add the dressing and toss to mix well.
Cover and refrigerate 1–2 hours or overnight. Serve chilled.
