Pre-heat oven to 350ºF.
In a large mixing bowl, combine the eggs, melted/cooled butter, vanilla extract, and sweetener.
Add the two flours, baking powder, and mix with a hand mixer on low, stopping to scrape down the walls with a spatula to ensure everything is mixed well, and mix again.
Fold in chocolate chips.
Using your hands, form 12, 2" balls and transfer to a baking sheet lined with parchment paper.
Bake for 15–20 minutes. At the 12-minute mark, open the oven and flatten each cookie slightly with the back of a spatula. Bake another 3–8 minutes until slightly browned.
Remove from oven and let cool 10–15 minutes before serving, enjoy!
