Pre-heat the oven to 375°F and grease a doughnut pan.
In a bowl, mix together all dry ingredients and set aside.
In a separate bowl, mix together wet ingredients until frothy.
Slowly incorporate the dry ingredients into the wet mix and continue blending until well combined.
Evenly pour batter into doughnut tins, leaving at least ½ inch of space at the top allowing the batter to raise.
Bake for 12- 15 minutes or until done.
Note: You can test to see if it is done by inserting a toothpick into the center. If the toothpick comes out clean, it is done.
Allow the doughnuts to completely cool in baking tin.
In the microwave, melt together the chocolate with coconut oil.
Note: Start melting in 30 second intervals to ensure the chocolate does not burn.
Once chocolate is completely melted, stir in almond milk until well combined.
Drizzle chocolate topping on each doughnut and refrigerate for 10 minutes.
