These keto chocolate covered almonds are the perfect sweet treat. The nutty flavor of almonds pairs perfectly with the rich and decadent flavor of chocolate. Enjoy the recipe as is or to save time, try making chocolate covered almond clusters! Simply add multiple almonds in a cluster to a parchment-lined baking sheet and drizzle the melted chocolate over top. Allow to harden in the fridge and you'll have delicious keto chocolate covered almond clusters!
Line a baking sheet with parchment paper.
Add the keto chocolate chips and coconut oil to a deep-set bowl or coffee mug. (this will make it easier to coat the almonds.
Melt the chocolate and coconut oil in the microwave for 30 seconds. Stir and then continue to microwave in 15-second intervals until fully melted. Be careful not to overcook or else the chocolate will harden.
Drop an almond into the melted chocolate, scoop out using a spoon or fork, and place onto the parchment paper. Repeat this step until all almonds are coated in chocolate.
Optional: sprinkle a little sea salt or coarse salt on top
Place your keto chocolate covered almonds in the fridge for 20-30 minutes or until the chocolate has set.
