
Skip the boring breakfast meals and try out this keto chorizo hash browns and fried eggs! These hashbrowns are made with cauliflower instead of potatoes so they are low-carb, but maintain the texture of traditional hashbrowns!
Melt 2 tablespoons of the butter in a sauté pan over medium heat. When the butter has begun to brown slightly, add the chorizo, bell peppers, onion, and garlic and cook for 3 to 4 minutes, until the vegetables begin to brown. Turn the heat up to medium-high and add the grated cauliflower; cook for 4 to 5 minutes, until the cauliflower begins to brown.
In a separate skillet, melt the remaining 2 tablespoons of butter and fry the eggs until done to your liking.
Finish the hash browns with the cheddar cheese, hot sauce, salt, and pepper.
Remove the hash browns from the pan and divide them evenly among 4 plates. Serve immediately with the fried eggs, 2 per serving. Store leftover keto chorizo hash browns and eggs in the refrigerator for up to 3 days.
