Preheat the oven to 400° F and grease a baking dish.
In a microwavable safe bowl, mix together the flour and mozzarella cheese.
Add the cream cheese in chunks and microwave for 1 minute, stir, and microwave for another 30 seconds.
Stir in the egg, baking powder, erythritol, and extracts.
Start to combine using a fork, then use your hands to make a ball of smooth dough.
Roll out the dough into a large rectangle.
Spread butter onto the dough,
Combine the erythritol, cinnamon, and espresso powder (optional) and sprinkle over the dough
Roll into a long roll and cut into 8-10 equal length parts.
Place rolls into the baking dish and bake for 20-25 minutes.
In a bowl, mix all of the frosting ingredients together.
Spread frosting over the warm rolls.
