Preheat the oven to 375°F.
Mixing together the cream cheese, seasonings, and spinach until well combined.
Dry the outside of the chicken breasts with a paper towel.
Rub salt and pepper into the chicken, to taste.
Cut the chicken breasts in half, length-wise.
Fold open the chicken breasts like a book.
Add half of the filling to each chicken breast and close.
Place on a cookie sheet and bake for 25 minutes or until the inside is no longer pink.
