Keto Dessert Chaffles with Ice Cream

Chaffles are delicious low carb waffles made from cheese. They're high in protein and low in carbs and most importantly - delicious!
The fact they are made from cheese may make it seem like chaffles are a savory dish, but mozzarella cheese has a neutral taste, making them highly customizable! This keto chaffle recipe is a sweet and tasty dessert that can be topped with keto ice cream. It is low carb and healthy and takes less than 20 minutes to make!

Ingredients
 2 eggs
 1 cup mozzarella cheese, shredded
 2 tsp coconut flour
 ½ tsp baking powder
 ¼ tsp cinnamon
 1 tbsp erythritol
 optional: 2 scoops keto ice cream

Directions

Heat waffle iron and spray with non-stick cooking spray.

Mix all ingredients in a bowl.

Pour the chaffle mixture into heated waffle iron and cook for ~3 minutes.
Note: if you have a flippable waffle iron, flip half way through.

Once crispy and cooked, remove the chaffle and repeat until all 4 are cooked. Allow to cool.

Top with a scoop of your favorite keto ice cream.
Optional: top with keto chocolate chips, berries, or sugar-free whipped cream.
