Keto Egg Drop Soup

Egg drop soup is a Chinese dish that combines the savory flavors of egg and chicken broth into a warm, comforting soup. Traditionally, this soup has added cornstarch (to increase thickness), but this recipe calls for xanthan gum. Xanthan gum is a high-fiber, low-carb alternative to flour or cornstarch to thicken a soup without adding extra carbohydrates.

 4 cups chicken bone broth
 2 eggs, beaten
 2 tbsp scallions, sliced
 1 tbsp coconut aminos
 1 tsp salt
 ½ tsp sesame seed oil
 ½ tsp xanthan gum
 ¼ tsp black pepper
 ¼ tsp ground ginger

In a pot, add the bone broth, salt, ground ginger, sesame oil, and coconut aminos and stir until all of the seasonings have dissolved.


Bring the mixture to a boil over high heat.


Slowly stir in the xanthan gum until dissolved.


Whisk the eggs in a bowl until well beaten.


Reduce the heat on the egg drop soup and slowly add in the whisked egg.


Stir in the beaten egg, one direction at a time. You should start to see the egg turn slightly stringy.


Remove the keto egg drop soup from the heat.


Serve your keto egg drop soup warm, with a sprinkle of chopped scallions on top.
