A low-carbohydrate take on the old classic, these eggs are encased in bell-pepper instead of high-glycemic bread. The bell peppers give a contrasting taste and texture to the eggs, and this dish pairs nicely with sliced tomatoes or berries.

Ingredients
 1 tsp olive oil
 2 sliced bell pepper rings (1/2 inch thickness)
 2 eggs
 salt and pepper, to taste
Directions

In a medium skillet, heat the oil over medium heat.

Add the bell pepper rings and sauté on one side for 2 minutes and then flip over.

Crack one egg into each bell pepper ring and reduce heat to low.

Cook the eggs through, about 8 minutes. Add salt and pepper, to taste, and serve warm.
