Keto Hummus

Don't you just miss the velvety smoothness and texture of a true hummus? Look no further, as this recipe will bring you to tears thinking it's "The Real Deal"! Now, I can't call this hummus only because the literal translation means garbanzo, but the flavor is impeccable to the real thing and it will leave you completely satisfied!

Ingredients
Keto Hummus
 8 oz cauliflower florets, air-fried
 2 cloves garlic, roasted
 1 ½ tbsp cumin
 ¼ cup avocado oil, or as needed
 ½ cup tahini
 2 tbsp salt (add to taste)Note: Redmond's Real Salt brand used
 freshly cracked black pepper, to taste
Toppings
 3 tbsp olive oil
 flake salt, to taste
 Zaa'tar, to taste
 thyme, to taste
 1 handful pine nuts, toasted
Accompaniments (nutritional info not included)
 1 cucumber, sliced
 peppers, halved
 celery ribs, chopped

Directions

In a small mixing bowl, toss the cauliflower with avocado oil and cumin.

Place in a 400°F air fryer and cook for 20 minutes.

While waiting on the cauliflower, place the remaining ingredients in a food processor.

When the florets are done, add them to the food processor and process until smooth as can be, scraping the sides as needed with a spatula.

Place the hummus in a bowl and garnish with remaining ingredients.
