Heart of palm noodles, also called palmini noodles, form the backbone of this rich and tasty dish inspired by Jamaican jerk cooking. While it might change the flavor profile, swapping out the jerk seasoning for Cajun seasoning is also a delicious option.
Warm the oil in a large high-rimmed pan or pot over medium heat. Add the onion and cook for one minute. Add the garlic and cook for another minute, then add the bell pepper and continue to cook for five minutes, stirring a few times.
Add the tomatoes, coconut milk, jerk seasoning, salt, and pepper. Simmer, stirring frequently, for 30 minutes or until reduced. Add the shrimp the last 10 minutes to prevent from overcooking.
Meanwhile, cook the hearts of palm noodles according to the package directions.
Once the noodles are done cooking, drain well and add them to the pan with the rest of the ingredients. Stir in the parmesan cheese and mix until well coated. Enjoy!
