Preheat oven to 350ºF.
Line a muffin tin with 8 paper liners.
In a large mixing bowl, add: eggs, lemon, flours, baking powder, olive oil, and sweetener.
Blend well with a hand mixer or whisk your heart out.
Lightly fold in blueberries, reserving some.
Fill the muffin cups halfway first, equally dividing batter.
Gently add reserved blueberries on top of each muffin.
Bake for 20 minutes. Let cool for 8–12 minutes. Enjoy!
