These simple keto lemon meringue cookies are a sugar-free twist on the classic, crunchy cookie. Don't feel guilty eating the whole tray because they are only 3 calories a serving!
Don't like lemon? Swap out the lemon juice for a flavored water-enhancer (like Mio or Stevia Sweetleaf) to customize your recipe!
Preheat the oven to 200 degrees F and line a baking sheet with parchment paper.
Beat the room temperature egg whites until soft peaks start to form.
Slowly add in the lemon juice, vanilla extract, and powdered erythritol.
Continue to beat the egg white mixture until stiff peaks form.
Scoop the mixture into a piping bag (you can use a ziplock bag) and pipe small, 1-2 inch cookies onto the sheet of parchment paper.
Note: try to make sure they are relatively even so they cook evenly.
Bake for 60-90 minutes, or until the keto lemon meringue cookies are no longer sticky.
Allow to completely cool before serving your delicious, sugar-free keto lemon meringue cookies!
