Keto cauliflower mac and cheese is a delicious, low-carb alternative to traditional carb-filled macaroni and cheese, but cauliflower still doesn't have the same texture as pasta. This recipe uses low-carb macaroni noodles so that you can maintain the texture and flavor of mac and cheese, but while staying in ketosis!
Boil a pot of water over high heat.
Cook the pasta in boiling water until soft (8-10 minutes).
While the pasta is cooking, melt the butter in a separate saucepan over medium-heat.
Stir in the seasonings and heavy cream.
Add in the thickener (gelatin or psyllium husk) and stir well.
Allow the sauce mixture to start to thicken and bubble, then stir in the shredded cheese (and bacon pieces if adding those in).
Once the pasta is done cooking, strain it and pour it into the thickened keto mac n cheese sauce.
Stir until all of the pasta is well coated in the sauce and serve.
Enjoy your keto mac n cheese right away or store in an airtight container in the fridge for up to a week.
