Keto Noatmeal Cauliflower Overnight “Oats”

Whether you are craving oatmeal or just looking for a keto breakfast that doesn't revolve around eggs, this keto noatmeal recipe is perfect for you! It packs the flavor and texture of oatmeal, but is made with cauliflower instead of oats. It isn't oatmeal, no it's keto noatmeal!

Ingredients

1 qt water

1 medium head cauliflower (5 to 6 inches in diameter), cored and florets grated

1 cup unsweetened almond milk

¼ cup vanilla protein powder (whey or plant-based)

¼ cup ground flax seeds

3 tbsp coconut oil powder or MCT oil powder

2 tbsp coconut oil or MCT oil

2 tbsp chia seeds

2 tbsp unsweetened coconut flakes

1 tbsp psyllium husk powder

1 tbsp ground cinnamon

1 tsp vanilla extract

¼ tsp ground allspice

¼ tsp ground cardamom

¼ tsp ground cloves

¼ tsp ginger powder

¼ tsp ground nutmeg

¼ tsp raw stevia powder, or 1 to 2 tablespoons granulated erythritol

Directions

Bring the water to a boil in a saucepan over high heat. While the water is heating, line a fine-mesh sieve with cheesecloth. Blanch the cauliflower in the boiling water for 3 to 4 minutes. Remove from the water and place in the sieve to drain for 5 to 10 minutes.

Place all the ingredients in a large bowl and mix until well incorporated. Divide among four 12-ounce (or larger) containers or jars and refrigerate overnight.

Serve chilled. Store leftovers in the refrigerator for up to 5 days.
