Southern Italian Spicy Keto Ragu

 4 oz extra virgin olive oil
 16 oz diced tomatoes
 3 oz shallots
 2 jalapeno
 2 lemon

Char the 2 lemons (halved), 3 shallots (halved), 2 jalapenos (halved & de-seeded) in a pan until caramelized. Remove.

Halve 2 lb of tomatoes, salt, and place in a large saucepan. Add the olive oil and cook on low heat for 1 hour. Add the lemons, shallots, and jalapenos after 30 minutes.

Remove the lemons and puree.

Add a protein of your choice!
