Keto taco soup satisfies the craving for Mexican food, but without all of the added carbohydrates. The base of the soup only calls for five ingredients, and you can dress it up with classic taco garnishes such as shredded cheese, sliced avocado, jalapeno peppers, sour cream, green onion, and cilantro.
Brown the ground beef in a large pot over medium-high heat for 7 to 10 minutes, or until no longer pink. Drain if desired.
Add 2 tablespoons of the taco seasoning and 3/4 cup of the broth. Simmer for 4 to 5 minutes, or until the liquid is mostly gone.
Add the remaining broth, diced tomatoes (with liquid), and the remaining tablespoon of taco seasoning, and combine.
Bring to a low boil and simmer for 8 to 10 minutes, and remove from heat.
Wait 2 minutes and then stir in the ranch dressing. Add any desired garnishes and enjoy!
