 2 large eggs
 ½ cup almond flour
 3 tbsp Swerve
 ½ tsp baking powder
 2 tbsp melted coconut oil
 ¼ cup unsweetened coconut milk
 ½ tsp vanilla extract
 ½ tsp cinnamon
 1 pinch pink salt

Preheat the waffle iron to high. Grease with oil spray.

In a medium bowl, beat egg whites to stiff peaks. Set aside.

In a large bowl, combine almond flour, Swerve, baking powder, and salt. Set aside.

Add yolks, coconut oil, almond milk, and vanilla to the egg whites. Fold ingredients until smooth. Add dry ingredients and continue folding until homogenous.

Transfer half the batter into the waffle iron. Close and cook until steam stops coming out (about 5 minutes). Remove and add the remaining batter.

Serve hot with toppings of your choice.
