Preheat the oven to 325°F .
In a medium bowl add all the ingredients for the almond paste in a food processor.
Blend until smooth and set aside.
In a medium bowl, blend almond paste and sweetener together until crumbly.
Slowly beat in two of the egg whites and sweetener until well combined.
In a separate bowl, whisk the remaining egg whites.
Shape dough into 2-inch cookies.
Dip into the egg whites and top with pine nuts.
Bake at 325°F for 15-18 minutes or until lightly brown.
