Loaded Keto Cauliflower

Say goodbye to boring vegetable side dishes with this loaded keto cauliflower recipe! It packs all of the flavors of loaded potatoes (like sour cream, bacon, cheese, and green onions) but with a healthy twist. This recipe simply swaps out the potatoes for cauliflower for a lower-calorie, lower-carb option.

Ingredients
 1 cauliflower head
  cup sour cream
 1 cup cheddar cheese, shredded
 2 tbsp heavy cream
 1 tbsp butter, softened (room temperature)
 2 bacon strips, chopped
 2 green onions, chopped(can also use chives)
 salt and pepper to taste

Boil a pot of water over high heat. Salt the water.

Cut the cauliflower from the stem and separate the florets.

Cook the cauliflower in the boiling water for about 5-6 minutes or until softened.

Drain the cooked cauliflower and set aside.

Cook the bacon and set aside to cool.

Combine the sour cream, butter, heavy cream, and any seasonings in a large bowl and stir well.

Add the cauliflower to the sour cream mixture and mix. The desired texture is similar to mashed potatoes with chunks still left.

Add this mixture to a baking dish and stir in the chopped bacon and shredded cheese (leave a few tablespoons to add to the top).
