c Creamed Coconut, canned

g Vanilla Ice Cream Sandwich Protein Powder (whey/casein blend)

g Coconut Oil Powder or MCT Oil Powder (optional for added fat, not required)

tbsp Cocoa Powder

tsp Truvia Blend (add more to taste if desired)

tsp Xanthan Gum (added separately)

Recipe Instructions

Add all ingredients besides xanthan gum to a large bowl.

Using a hand mixer, blend all ingredients until combined, about 60 seconds. Add xanthan gum and mix with hand mixer, another 60-90 seconds.

Add to ice cream maker and allow to churn/ freeze (about 15-20 min).

Remove and enjoy! Store left overs in the freezer, to enjoy again, allow 10 minutes to dethaw after being frozen for soft, creamy texture. Purposely low cal and 58% fat so you can top with a keto cookie, no bake keto Fudge, whipped cream, nuts, or any other added fats and keep calories moderately low!
