Monkfish is a delicious fish and worth a try if you haven't had it. Sometimes called "poor man's lobster," it's delicate and sweet and cooks up quickly in a tomato sauce spiked with capers, garlic, and smoked paprika. If you can't find monkfish, substitute another flaky white fish like cod.
Preheat the oven to 400ºF (205ºC).
Heat an oven-safe skillet over medium heat. Once hot add half of the oil. Add the fish and cook for two minutes, then add the garlic and capers. Flip the fish and cook another two minutes.
Remove the skillet from the heat and pour the tomato sauce around the fish. Add the smoked paprika and season everything with salt and pepper. Transfer the skillet to the oven and cook for ten to 12 minutes, or until cooked through.
Divide the sauce and fish onto plates and garnish with parsley. Serve and enjoy!
